OUR STORY

El Consuelo Tequilas sources its 100% organic agave from the Los Altos highlands in the Tequila region of Mexico. Because of the unique climatic characteristics, fresh air & rich soil, this area is well known for producing larger, fruitier agave, ideal for tequila. This organic agave ensures El Consuelo makes tequila the way tequila was meant to be, pure and flavorful.

OUR ORIGINS

El Consuelo is produced in the village of Rancho Lagunillas, nestled in Atotonilco El Alto, the prized Highlands Region of Jalisco, whereby the community is engaged in every detail, from harvest through distillation & aging. This vertically integrated approach is very different from an arms-length transaction of importing product, or buying liquid from a distillery.

We make tequila the way that tequila was meant to be, pure, free of chemicals and any additives. We do not contract with a distillery for the purchase of liquid, nor do we buy agave plants on the open market.  All of our agaves are estate grown.  Every step of the tequila making process is done in small batches by the hands of our own farmers, from our own agave fields, with our own proprietary yeast, using our own distillery, and bottling process. We believe our small batch process produces the best tasting tequila in the world.

 

HOW DO WE MAKE EL CONSUELO TEQUILA?

IT STARTS WITH THE 100% PURE AGAVE PLANTS FROM THE HIGHLANDS OF JALISCO.

 

step1agaveTHE AGAVE: Our Tequilana Blue Weber Organic Agave plants are approximately 6’ tall and take about 8-9 years to mature. We NEVER use any chemicals, or growth compounds, therefore each plant is carefully cared for to keep the insects off. During the 8-9 year maturing period, our plants are touched nearly 800 times by our farmers ensuring our tequila is made from the highest quality Agave in Jalisco.

When our agave are at the pinnacle of sweetness and ready for harvest, Jimadors use a sharp, long-handled tool called a “coa” to cut the leaves from the agave plant. After this, you’re left with the heart of the agave called a “piña” which can weigh up to 200 pounds. Additionally, our Jimadors trim the piñas very closely; eliminating off-flavors associated with the agave plant spines. The attention to detail in the selection and harvest of plants is important, setting a foundation for an exceptional finished product.

 

THE BAKING OF PIŃAS: agave piñas are slow-baked in brick ovens for approximately 24 hours, and allowed to cool for 26 hours. This ensures consistency in the cooking process and allows bitter extracts to be separated and discarded, creating a sweet aroma, rich flavor, and incredible tequila. The cooking process converts the carbohydrates of the piñas into fermentable sugars for fermentation.

 

FERMENTATION: After the cooking process is complete, our piñas are washed and shredded to ensure all flavor is extracted from the pina. The by-product of this shredding is “mosto”, a sweet liquid like honey water.
Ready for fermentation, our craftsmen add our ancestral yeast strain for our open-air fermentation performed at ambient temperatures. This step is not rushed, nor efficient, but a very important step in our process to produce our
beloved El Consuelo.  We take our time, adding no heat to speed the process. The result is a complete, robust fermentation yielding a high quality alcohol ready for distillation.

 

DISTILLATION: Distillation is part art and part science – Our Master Distiller, has years of experience in creating unmistakably balanced tequila with aromatic taste profiles that are truly superb.  The art of separation of the “heart of the distillation” from the “heads & tails” is a critically important step in the creation of our award winning tequila with a purity validated through scientific measurement…

 

AGING: El Consuelo’s tequilas are all made in small batches. The Reposado and Añejo are single-barrel aged in American Oak Whiskey barrels, achieving rich amber colors and unique full-bodied flavors with hints of barrel wood alongside the delicate agave flavors. Our Reposado is aged for up to 8 months and our Añejo for 12 months.

 

BOTTLING: Each bottle is washed in a Tequila based solution and then filled with Blanco, Reposado, or Anejo Tequila, and lastly, the corks and labels are added.
Loving hands from Jalisco, complete the entire process.  Next, our bottles are visually inspected to ensure proper fill and for any impurities.  Only when this process is complete do we allow for it to be called El Consuelo Tequila.  While its not efficient, it’s the difference in our care and process that makes this brand so special.
